Mexican Shakshouka

Ingredients

Made with tomato sauce, onions, jalapeño, taco spice, melted vegan mozzarella, avocado, and cilantro.

Directions

sautéed some onion and jalapeño in olive oil and then added plain tomato sauce (diced tomatoes would work as well). I mixed in some taco seasoning and then mixed in mozzarella. Crack in the eggs, cover, and cook for 4-5 min until whites of eggs have set. Top with avocado slices, extra jalapeño if desired, and fresh cilantro.
