Lemon and Orange Cream Cheese Muffin have a bright lemon flavor, are finely textured, low carb and lightweight, and completely delicious.
These Lemon Muffins make the perfect accompaniment to your morning cup of coffee.

Ingrédients :
For the base :
- 120g of ground almonds
- 90g of melted unsalted butter
- A pinch of salt
- A tsp of stevia
For the filling :
- 300g of full fat cream cheese
- 3 eggs
- 3 tsp of stevia
- The zest of 2 lemons
- The zest of 1 Orange
- A few drops of vanilla extract
- 2 tsp of baking powder
- A pinch of salt
Directions :
- Preheat the oven to 180°c.
- Put 12 muffin cases into a muffin tray.
- Mix the ground almonds, butter, stevia and salt together then divide between the muffin cases evenly and press the mixture firmly down in the bases.
- Bake for 10mins in the centre of the oven.
- Mix all the filling ingredients well together.
- After the 10mins spoon the filling on top of the bases and bake for a further 20 mins.
