Homemade Larabars Recipe (Whole30 & Paleo)

This simple homemade Larabars recipe has only 4 ingredients! These paleo whole30 Larabars taste like real Larabars, but DIY Larabars are much cheaper.

 1 cup Mixed nuts (I used Brazil, walnuts, and almonds)
 1 cup Dates (I used medjoul)
 1 cup Unsweetened shredded coconut
 2 tsp Cacao powder

Roast the coconut in a dry pan over medium-low heat for a few minutes until the edges are golden brown.

Add the pitted dates, nuts, coconut, and cocoa powder to a blender or food processor. Pulse until all ingredients are chopped.

Turn on the blending mode for about 1 minute, or until it forms a ball.

Place the "dough" on a piece of parchment paper and mold it into a square about 3/4" thick. Let cool for 2-3 hours until it hardens.

Cut into 10-12 pieces and put in the refrigerator to chill.
