Creamy Pesto fusilli salad

Pesto is great with pasta whether it’s warm OR cold. This creamy pesto pasta salad is a great make-ahead side dish to feed a crowd, or a great dinner all on its own.

This recipe is so easy and delicious, you’ll only need 5 minutes and 4 ingredients to make this sauce.

Preparation: 15 minutes
Cook: 8-9 minutes ( According to the package instructions)
Servings: 2 Pers

Ingrédients :

  • 1 ripe avocado
  • 2 handfuls fresh basil
  • 1 lime juice
  • 1/4 cup coconut milk
  • 2 tbsp extra virgin olive oïl
  • 200g fusilli pasta
  • Garnish: roasted pine nuts, roasted corn, fresh basil and mint leaves.

Directions :

  1. Place the avocado, coconut milk, lime and basil in a food processor or high speed blender and blend until well combined. With the machine working, slowly add the olive oil and blend until creamy and smooth.
  2. Cook the pasta according to the package instructions. Drain and place in a bowl.
    Pour the sauce over the pasta and toss to combine. Serve with roasted corn and fresh basil leaves
