Pesto is great with pasta whether it’s warm OR cold. This creamy pesto pasta salad is a great make-ahead side dish to feed a crowd, or a great dinner all on its own.
This recipe is so easy and delicious, you’ll only need 5 minutes and 4 ingredients to make this sauce.
- 1 ripe avocado
- 2 handfuls fresh basil
- 1 lime juice
- 1/4 cup coconut milk
- 2 tbsp extra virgin olive oïl
- 200g fusilli pasta
- Garnish: roasted pine nuts, roasted corn, fresh basil and mint leaves.
- Place the avocado, coconut milk, lime and basil in a food processor or high speed blender and blend until well combined. With the machine working, slowly add the olive oil and blend until creamy and smooth.
- Cook the pasta according to the package instructions. Drain and place in a bowl.
Pour the sauce over the pasta and toss to combine. Serve with roasted corn and fresh basil leaves
